I just asked the same question to Pikachu3828 in the IRC chatroom - and basically he said you can sail any time within the 12 hour period it says, so for you, you can do it anytime between 3am and 3pm... So you dont have to be on at 3am - if you want to do it at midday, or half 2 in the afternoon -...
