My favorites are:

Umbreon and Espeon because they look like cute huggable kitty things
Tyranitar because it's big and scary
Houndoom because I like big dogs. They always look scarier than they are.
Crobat because from an annoying Zubat comes something awesome.

And, since I'm old enough to have played R/B/Y, I'm going to throw in Bulbasaur and Pikachu because I do their voices really well.
